maraschino cherries are commonly, if not always, dyed with cocchineal, a red dye made of crushed up female cocchineal bugs. if you're getting an amaretto sour at a place that makes it properly, then you'll have to ask them to leave the cherry out.

lots of alcohol is filtered through isinglass, which comes from the swimbladder of fish (the organ that helps them retain buoyancy)... others use bone char, too. check out http://www.veganporn.com/booze for more info on that.
